Appetizer, Nibbles




  • 250grams Cream cheese (full fat)
  • 2 Gherkins (pickles), diced
  • 2 Jalapenos, diced
  • 1 tablespoon fresh Chives, diced
  • 6 slices of bacon, cooked, diced
  • 1/2 bag Pork scratchings/crackle, crushed


    1.  Wash your hands or put gloves on
    2. Place half the bacon and the pork scratchings on a plate or small bowl
    3. Place the rest of the ingredients in a medium bowl and mix with a wooden spoon or just get in there with your hands. Once fully mixed shape into a ball
    4. Roll the ball in the bacon, pork scratching mix. Coat well
    5. Leave on the plate or bowl in the fridge covered (optional)
    6. Pull out of the fridge about 30 minutes before serving (to soften abit) and place on a serving platter along with vegetable sticks, pork scratchings/crackle or your favourite low carb crackers
